This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Harrelson Estate in Detroit, Michigan in 1984. “Say Aloha to a very moist and scrumptious dessert, Hawaiian Pineapple Pie. Read more . The taste of the tropics comes through in refreshing coconut and tangy pineapple. But there are other good ingredients, too - uncooked quick or old fashioned oats and raisins. Take your taste buds on an Island tour at a price you can easily afford.”
Ingredients:
3 eggs
1/2 cup sugar
1 cup firmly packed brown sugar
2 tablespoons butter melted
1 teaspoon vanilla
1 cup quick or old fashioned oats uncooked
1/2 cup shredded or flaked coconut
1/2 cup raisins
8 ounce can crushed pineapple undrained
9 inch unbaked pie shell
Directions:
1. Heat oven to 350.
2. In large mixer bowl beat eggs at high speed until lemon colored.
3. Gradually blend in sugars beating well after each addition.
4. Add butter and vanilla then mix well.
5. Stir in oats, coconut, raisins and undrained pineapple then mix well.
6. Pour into unbaked pie shell.
7. Bake 50 minutes or until filling is set.
8. Cool on wire rack before serving.
