Ingredients:

Directions:

  1. Combine: walnuts; raisins; dried mango; dried papaya; whole-wheat flour.
  2. Mix well.
  3. Combine: oil; vanilla or 1 tsp.
  4. Coconut extract; salt; whole eggs; egg white; pineapple, mix well.
  5. Add liquid to dry, mix well.
  6. Spoon into sprayed 9x5 loaf pan; bake 350, approx.
  7. 1 hr or till center comes out clean w/ knife.
  8. Cool on rack.
  9. Take out of pan, wrap tightly, refrigerate till cold.
  10. Cut in 16 slices.
  11. Stores up to 2 weeks.
