Hawaiian Chicken with Brown Rice

Sweet and sour with a hint of spice, depending on how much cayenne is added. Fast and easy preparation. Recipe makes 4 small servings.
Ingredients:
1 chicken breast, boneless skinless
1 dash of salt
1 dash cayenne pepper
1 tbsp flour
1 tbsp olive oil
1/2 onion, chopped
1 green bell pepper, chopped
6 oz pineapple juice
8 oz pineapple, crushed
4 oz mushrooms, canned
1/4 c low sodium soy sauce
1/4 c water
1/4 c vinegar
1/4 c honey
3/4 c brown rice
Directions:
1. Cook rice according to directions. 3/4 cups of raw brown rice will yield 2 - 2 1/4 cups cooked.
2. Sprinkle chicken with salt, toss with flour.
3. Brown in oil in large skillet over medium-high heat.
4. Add onions and pineapple juice, simmer for 5 minutes.
5. Add soy sauce, water, vinegar and honey, simmer for additional 20 minutes.
6. Add crushed pineapple, mushrooms and green pepper, simmer another 5 minutes.
7. Serve over rice.
