Hawaiian Chicken Salad For A Crowd

A great recipe in which seasonings can be varied as well as the added fruit.
Ingredients:
4 tablespoons curry powder
2 tablespoons soy sauce
2. cups mayonnaise ( good quality )
4 (3 lb) broiler chickens , cooked, skinned and deboned
( for quick, preparation buy already roasted chickens )
1 pound fresh seedless grapes, halved
2 cans water chestnuts, drained, sliced (8 oz each)
2 bags sliced almonds, (3 oz each)
2 cans pineapple chunks in juice, drained (13oz each)
Directions:
1. Mix curry, soy sauce, and mayonnaise; toss with other ingredients.
2. Correct seasonings if desired.( salt, pepper, etc. add a bit of honey )
3. Chill before serving.
4. Can be plated individually or presented in a large serving bowl.
