This is an awesome cake. It is easy to make yet looks very impressive and tastes like you slaved for hours. Enjoy.
Ingredients:
1 package yellow cake mix
1-1/4 cups cold milk
1 small package instant vanilla pudding mix
20 ounce can crushed pineapple drained
1 envelope whipped topping mix
3 ounces cream cheese softened
1/4 cup sugar
1/2 teaspoon vanilla extract
1/2 cup flaked coconut toasted
Directions:
1. Prepare and bake cake according to package directions using a rectangular cake pan.
2. Cool completely.
3. In a bowl whisk together milk and pudding mix then let stand to thicken.
4. Stir in the pineapple and spread over cake.
5. Prepare whipped topping mix according to package directions then set aside.
6. In a mixing bowl beat cream cheese, sugar and vanilla until smooth.
7. Beat in 1 cup whipped topping then fold in remaining topping and spread over pudding. Sprinkle with coconut then cover and refrigerate 3 hours or overnight.
