THIS IS AN HAWAIIAN DISH THEY SERVE AT ALL THEIR LUAU'S, AND FOR DESSERT; EXCEPT THIS IS NOT AS FIRM AS USUAL THIS IS MORE PUDDING LIKE AND HAS BANANAS.
Ingredients:
1 quart of coconut milk
1/4 cup sugar
1/4 teaspoon salt
2 bananas, sliced
2 tablespoons cornstarch
Directions:
1. ADD COCONUT MILK AND SUGAR TO A SAUCEPAN AND STIR OVER MEDIUM HEAT UNTIL SUGAR AND SALT ARE DISSOLVED.
2. ADD BANANAA TO THE POT AND COOK, STIRRING OFTEN UNTIL BANANAS ARE INTEEGRATED INTO THE MIXTURE.
3. MAKE A SLURRY IN A SEPARATE SMALL BOWL BY GRADUALLY WHISKING 2 TABLESPOONS WATER INTO THE THE CORN-STARCH.
4. WHISK SLURRY MIXTURE IN POT ALLOW TO REDUCE AND THICKEN UNTIL IT IS CONSISITANCY OF YOGURT.
5. TRANSFER TO SERVING DISHES AND CHILL......FOR 30 MINUTES TO 1 HOUR..........
