Hasty Pudding Also Known As Corn Meal Mush

A colonial recipe using corn meal and end flavored any way you like it. The unused portion can be floured and fried the next day. (polenta translates to corn meal mush)
Ingredients:
1/2 cup yellow corn meal
3 cups of water
1/2 teaspoon salt
your choice of toppings: bacon, molasses, honey, garlic, brown sugar, any flavor syrup, butter and sugar, etc
Directions:
1. Mix the corn meal and 1 cup of cold water in a bowl.
2. Bring the other 2 cups of water to a boil and add the salt and then the corn mixture
3. lower the heat and cook 10-15 minutes until mixture is soft stirring frequently
4. For a variation and no stirring place in a double boiler and steam for 30 minutes, stirring is not necessary this way
5. serve with cream, maple sugar, brown sugar, honey, molasses, garlic, or any flavor syrup you like (chocolate is also good here)
6. ****pour unused mush in a greased loaf pan and chill overnight and the next morning slice the mush, dust with flour and brown in butter or bacon grease. Serve with any syrup
