I got this recipe from my boyfriend's mother. It was his favortie growing up and has quickly become a favorite in our household.
Ingredients:
2 lbs. frozen southern-style hash browns
1 tsp. salt
1 tsp. pepper
1/2 cup chopped onions
1 cup sour cream
8 oz. grated cheddar chesse
1 can cream of chicken soup
1/4 cup melted butter
1 cup chrushed cornflakes
Directions:
1. Preheat oven to 350
2. Defrost the potatoes
3. Combine everything except butter and cornflakes
4. Pour into a 13x9 (3 qt.) casserole dish
5. Mix cornflakes crumbs with melted butter and pour over potato mixture
6. Cover with foil and bake for one hour
