Hash Brown Omelete

A very good and easy omellete.
Ingredients:
4 slices bacon
2 c. shredded hash brown potatoes
1/4 c. chopped onion
5 eggs
1/4 c. milk
1/2 tsp. salt
1 c. shredded cheddar cheese (4 oz.)
Directions:
1. In a large skillet cook bacon until crisp.
2. Drain bacon on paper towels, reserving 2 tablespoons drippings in skillet.
3. Crumble bacon; set aside.
4. Combine potatoes and chopped onion; pat into the skillet.
5. Cook, uncovered, over low heat about 7 minutes or until crisp and brown, turning once.
6. Meanwhile, in a small mixing bowl beat together eggs, milk and salt; pour over potato mixture.
7. Top with cheese and bacon.
8. Cover; cook over low heat for 5 to 7 minutes or until egg mixture is set.
9. Loosen omelet; fold in half.
10. Turn out of skillet onto plate.
11. Cut into wedges to serve.
12. If desired, garnish with green onions.
