About the time my toddler started cutting molars, he gave up baby food. So it's been a struggle to figure out what he'll eat (besides breastmilk.) My 14yo step-son had a 1-day health-improvement kick, wherein he discovered that he didn't like V-8. But the toddler likes V-8. Hurray! And he likes smoothies. So this creation is for him.
Ingredients:
1 sweet potato, peeled, chopped, and boiled (reserve the boiling water)
1 banana, ripe
1 apple, peeled, cored, and chopped
1/8 teaspoon cinnamon
1 cup water (from the boiling sweet potato)
Directions:
1. Prepare the sweet potato and put it and its boiling-water in the refrigerator to cool. (If you don't have time for this, use tap water and some crushed ice to cool down the smoothie.).
2. Put everything in the blender and puree.
