Harvest Garden Turkey Taco Filling

Another delicious and healthy way to use up the end of season garden bounty. Use your favorite taco seasoning here. I like Basic Taco/Fajita Seasoning. Serve this in soft or hard shell tacos, with the standard taco garnishes.
Ingredients:
1 1/4 lbs lean ground turkey
2 medium zucchini, diced (2 cups)
1 large bell pepper, chopped (1 cup)
1 medium onion, chopped (1 cup)
1 cup chopped tomato
3/4 cup frozen corn, thawed
1 teaspoon olive oil, divided
3 -4 tablespoons taco seasoning
1/3 cup water
4 garlic cloves, minced
salt and pepper
Directions:
1. In a large non-stick skillet heat 1/2 tsp of oil over medium heat. Add ground turkey, salt and pepper to taste, and cook through until no longer pink. Remove to a bowl.
2. Heat remaining oil over medium-high heat. Add garlic, onions, peppers, and zucchini. Cook until vegetables begin to soften, about 10 minutes.
3. Mix in corn and cook another 5 minutes.
4. Add 2 tablespoons of seasoning and mix. Add ground turkey, water, and remaining seasoning. Mix well.
5. Add tomatoes, mix well, and cook until heated through.
