If you like acorn squash, you'll love this. It's perfect for the fall and brings out all the flavors of the season. This can be prepared a day ahead.
Ingredients:
1 large red delicious apple, cut into 1/4 inch cubes
3/4 cup raisins
1/2 cup butter
4 table. dark brown sugar
1 table. maple syrup
1 tea. ground cloves
2 medium acorn squash
1 tea. vegtable oil
Directions:
1. 1. Preheat over to 400*
2. 2. Mix apple and raisins
3. 3. Melt butter. Add sugar and stir to dissolve. Add maple syrup, cinnamon and cloves. Stir till blended. Pour over apple mixture and mix well
4. 4. Slice squash lengthwise. Scoop out seeds and strings. Puncture cavity 20 times with fork, being careful not to pierce skin. Rub oil over inside surface of squash. Fill cavity with apple mixture
5. 5. Cover with foil and bake 1 hour.
