Harissa and Orange Pearl Barley Salad / Marinade

The dressing for this salad can also be used to marinate chicken, lamb or thickly sliced eggplant. The dressing / marinade will keep in the fridge for up to 2 weeks.
Ingredients:
3 tablespoons harissa
2 small lemons, zest and juice
4 1/2 tablespoons olive oil
2 teaspoons honey
1/2 teaspoon ground cumin
salt and pepper
7 ounces pearl barley, cooked according to pack instructions, cooled
1 red onion, finely sliced
2 oranges, peeled and segemented
4 ounces arugula
Directions:
1. Mix the first 5 ingredients together thoroughly with plenty of seasoning to make the dressing.
2. Mix the pearl barley with the onion, orange segments and arugula and stir through 4 tbs of the dressing.
3. Serve.
