national soup dish of morocco...need say no more
Ingredients:
1.5 lbs skinless chicken wings thighs or drumsticks.
5 celery sticks chopped
1 red onion peeled and chopped
1.5 cup red lentil soaked in water
3 tablespoons virgin oil oil
1 can 28oz chopped tomaotoes
1 can cooked garbanzo beans
3/4 cup chopped flatleaf parsely
1 cup chopped cilantro
1/2 teaspoon each blackpepper and cayenne pepper
3/4 teaspoon ground cinammon
1,25 teaspoons ground ginger
1 lemon
1 heaping teaspoon tumeric
sea salt to taste
2 cups vermicelli pasta
5-6 cups water
Directions:
1. place chicken,onions,celery,all the spices and olive oil,sir frequently for 5 minutes. save the juice of the crushed can of tomatoes and add the crushed parts only, cover pot simmer for 15 minutes
2. add tomato juice and 5 cups water and lentils. bring to boil and simmer for 35 minutes.. drain garbanzo beans and add to the cooking mixture,bring to boil and cook for 3 minutes,add vermicelli
3. and lemon juice. turn heat to low and cook till vermicelli is done
4. about 10 minutes.
5. ladle into soup dishes and garnish with chopped cilantro leaves
6. and little drizzle of extra virgin olive oil
