Happy Hour Mushrooms

These are easy and yummy. Double recipe easily for a larger crowd.
Ingredients:
10 medium sized mushrooms
6 tablespoons butter, softened
1 clove garlic, minced
4 tablespoons shredded monterey jack cheese
2-3 tablespoons dry white wine
1 teaspoon soy sauce
1/3 cup finely crushed ritzĀ® cracker crumbs
Directions:
1. Remove stems from the mushrooms. (Save for other use)
2. In a small saucepan, over medium heat, melt 2 tablespoons of butter. (May also nuke in microwave if desired)
3. Brush mushrooms caps with butter, coating thoroughly.
4. In a small bowl, stir together remaining butter, garlic and cheese.
5. Stir until well-blended.
6. Stir in wine, soy sauce and cracker crumbs until well blended.
7. Place mushrooms, cavity side up, on a rimmed baking sheet.
8. Mound filling in mushrooms, pressing lightly.
9. Broil about 6-inhces from heat until bubbly and lightly browned, about 3-5 minutes.
10. Serve warm.
