Happy Days Cake With Strawberries |

At first this sounds like your average yellow cake recipe, but the flavor is different... Ingredients:
2 1/4 c. flour |
1 1/2 c. sugar |
1/2 c. butter, room temp. |
1 tsp. vanilla |
2 eggs |
3 tsp. baking powder |
1 tsp. salt |
1 c. milk |
2 quarts strawberries, washed and stemmed |
reserve a few for garnish if desired |
sugar to taste |
Directions:
1. Preheat oven to 375
2. whisk all the dry ingredients together
3. Gradually add the milk, mix well
4. add butter, eggs, and vanilla once again mix well
5. Pour into a well greased 13x9 pan
6. Bake for 30-35 minutes, the top of the cake should be a rich golden brown.
7. mash your strawberries in a large glass bowl, they should be chunky
8. add sugar to taste
9. serve over squares of the cooled cake
10. garnish with whipped cream and whole berries
