Ingredients:
1 chicken breast
romaine lettuce
spring greens
1/4 cup juillienned carrot
1/4 cup celery, diagonal cut
1/4 cup scallion, diagonal cut
1 cup peanut sauce
6 ounces rice noodles or 6 ounces fettuccine
Directions:
1. fire grill marinated chicken breast and glaze with teriyaki sauce.
2. cook noodles - al dente and drain.
3. plate greens carrots celery and scallions.
4. in sautee pan;heat noodles and peanut sauce.
5. add grillied chicken.
6. blend all ingredients.
7. place warm on top of salad greens.
8. top with fresh chopped peanuts and cilantro.
