Hanalei Bay Banana Nut Bread

a whole sunday brunch in itself. Family recipe most especially loved by the elders.
Ingredients:
3 cups flour
1 tsp baking soda
2 tsp cinnamon
2/3 c grated coconut
1 cup canola oil
4 tsp vanilla extract
3/4 tsp salt
2 cups sugar
3 eggs, beaten
2 cups mashed ripe bananas
1 1/2 cups chopped macadamia nuts
1 8 oz can crushed pineapple
Directions:
1. Combine flour, salt, baking soda, sugar and cinnamon.
2. Combine remaining ingredients together, add to flour, stirring just until dry ingredients are moistened.
3. Spoon batter into 2 greased and floured (or use Pam) loaf pans.
4. Bake at 350 F for 1 hour 10 minutes.
5. Remove from pans and let cool on wire racks.
