Quick and easy! A tasty ham, egg, and hash brown casserole great for brunch or breakfast.
Ingredients:
16 ounces shredded hash browns, thawed and refrigerated
16 ounces ham
1 cup shredded cheddar cheese
6 eggs
3/4 cup half & half
1/2 cup ricotta cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon flour
1/2 cup sweet onion, diced
1 red pepper, chopped
4 ounces diced green chile peppers
Directions:
1. Preheat oven to 350°. Spray 9 square baking dish with a non-stick spray.
2. Spread hash browns evenly in baking dish.
3. Layer ham and shredded cheese over hash browns and set aside.
4. In a bowl, combine remaining ingredients. Stir until well blended.
5. Pour over hash browns in baking dish.
6. Bake for 45 minutes, uncovered.
7. Cut into squares and serve warm.
