This soup is delicious with home made biscuits, or corn bread on a cold and windy day.or just any time.
Ingredients:
1-large can of stewed tomatoes italian style or plain stewed.
1-onion chopped up into med. size pieces.
1-1/2 lb of ground beef or you can use ground turkey as that is what i use most of the time.
1-1/2 large bags of mixed vegetables.
2- stocks of chopped celery
1tsp of garlic- chopped
salt and pepper.
1/2 of a green or red pepper. chop in sm. pieces.
1cup of cooked rice white or brown.
2 tbsp of corn starch. mixed in cold water
Directions:
1. Brown beef or chicken in a little bit of garlic and half of the onion cook in pam in lg. fry ing pan make sure the onion is brown and the meat. drain well. place into big soup pot.
2. add water to cover the meat to about half way up the pan. about 6cups or so. then add all the chopped vegetables and rice to pot . then add the stewed tomatoes. and a large can of tomatoe sauce. add the rest of the onion and 2tbsp of garlic to soup mix. add salt and pepper. can also add chilli pepper the powdered kind i use for a change. now add the 1-1/2 bag of mixed vegetables. bring to a boil then turn down to med. heat and boil for about an hr. check the mixed vegetables to see if they are done. check often. when vegetables are done the soup is done and this is the time you mix the corn starch with water and add to soup slowly, stirring till it boils. stir until soup comes to a rolling boil for about 5 mins. till it gets to the thickness you like.
3. this soup is great served with cheddar cheese sprinkle on top when served in the bowls. also can add a dollop of cream cheese on top.
