Hamburger Stroganoff - Delicious

This is a very easy, delicious meal - most of the ingredients can be found in your pantry for an emergency entertainment meal. Comfort food. If you use canned mushrooms, be sure to drain.
Ingredients:
1/2 cup onion, minced
1 garlic clove, minced
1 tablespoon butter
1 lb ground beef
1 tablespoon salt (to taste)
1/4 teaspoon pepper
1 lb fresh sliced mushrooms or 8 oz.canned mushrooms
10 1/2 ounces cream of chicken soup, undiluted
2 cups rice (cooked according to package directions or 1 lb. pkg. pasta)
Directions:
1. Saute onion and garlic in butter over medium heat. Stir in ground beef and brown. Stir in flour, salt, and pepper - let cook for about 3 minutes, stir in mushrooms. Cook 5 minutes. Stir in soup. Simmer uncovered 10 minutes. Stir in sour cream and heat through (don't allow it to come to a boil).
2. Serve in a ring of rice, or buttered noodles.
