Hamburger Soup

A down home comfort food!
Ingredients:
1 1/2 lbs lean ground beef
1 -2 onion, chopped
1 (28 ounce) can diced tomatoes
2 cups water
1 (10 ounce) can tomato soup
1 dash parsley
4 carrots, chopped
3 stalks celery, chopped
8 tablespoons pearl barley
1/2 teaspoon thyme
1 bay leaf
3 (10 ounce) cans consomme or 2 beef bouillon cubes, mixed with 2 cups of water
salt and pepper
Directions:
1. Brown meat and onions.
2. Drain well.
3. Combine all ingredients in a large pot.
4. Cook at least 2 hours or use a crockpot and cook up to 8 hours.
5. Remove bay leaf before serving.
6. This soup freezes well.
