HAM PEPPERY JACK BISCUITS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gee Estate in Quinlan, Texas in 1994.
Ingredients:
2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
5 tablespoons cold butter cut into small pieces
1 cup buttermilk
3 slices ham crumbled
1 cup grated pepper jack cheese
Directions:
1. Combine dry ingredients in bowl.
2. Cut in butter using pastry knife until it resembles coarse crumbs.
3. Add buttermilk and stir just enough to form a ball.
4. Fold in ham and cheese then drop heaping tablespoonfuls on baking sheet.
5. Bake at 450 for 12 minutes then serve immediately.
