I am one of those people who needs breakfast. Most of the guys I travel with are not ready to eat until 10:00. I do not understand this. We will stop by the hotel dining room or a coffee shop so I can chow down on some sausage and eggs, with hash browns or grits. Read more . They drink coffee and act like I’m not eating. However, I also do not want to spend a lot of time cooking breakfast every morning and cold cereal just doesn’t seem to cut it. So, I usually get things pretty much ready for breakfast the night before, or do something really, really simple. I have a seemingly endless supply of sugar cured ham so The Ham & Egg Samich is one of my favourites for a quick repast in the morning. It gets changes, depending on what’s in the fridge but here are the basics. This is for one but you can make it over & over.
Ingredients:
• 2 slices of toast. can sub a split english muffin.
• a bit of pre cooked ham at room temp.
• 1 fried or poached egg.
• a bit of white sauce. white sauce can be made in advance and kept in the fridge for two to three days, if you treat it right.
• salt & fg pepper to taste.
Directions:
1. 1. Toast the bread, or English muffins.
2. 2. Fry or Poach the egg. While you're doing the egg.
3. 3. Lay the ham on top of one slice, or 1/2 the muffin. I just have the ham at room temp but you can nuke it, or whatever.
4. 4. Put the second slice of toast, or muffin, on that and lay on a couple spoons of white sauce.
5. 5. Put the egg on top of the lot and give that another spoon of white sauce.
6. 6. Salt & FG Pepper to taste.
7. 7. Breakfast is served.
