Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a 9x13 baking dish.
  3. Sprinkle dish with half the hash browns.
  4. Layer on half ham, cheese, red peppers & mushrooms.
  5. Repeat layering of remaining ham, cheese, red pepper & mushrooms.
  6. Top w/ leftover hashbrowns.
  7. Beat eggs, milk, cottage cheese, salt & pepper to taste w/ whisk.
  8. Pour over dish.
  9. Bake uncovered 45-50 minutes (til light brown and the center is set).
