Fun brunch/brreakfast recipe from Family Circle. Serve with hash browns or home fries and fresh fruit.
Ingredients:
8 sliced deli cured ham
4 tbs shredded sharp cheddar cheese
1 green onion, thinly sliced
8 large eggs
pepper to taste
Directions:
1. Heat oven to 400 degrees.*
2. Coat 8 muffin cups with nonstick spray.
3. Place 1 slice of ham in each muffin cup, doubling each slice over to ensure there are no holes in the bottom.
4. Sprinkle each cup with 1/2 tbs cheese and 1/2 tbs green onion
5. Break 1 egg into each cup.
6. Sprinkle lightly with pepper.
7. Bake 15 min. or to desired degree of doneness.
8. Remove cups onto serving plates.
