Ham And Cheese Muffins

We just finished these for breakfast this morning. It is a great fast meal and is very portable. Great for carrying to work! They taste like a ham and cheese biscuit.
Ingredients:
3 cups bisquick
1 cup milk
2 eggs
3 tablespoons vegetable oil
8 oz cheese shredded or cubed
1 cup chopped or cubed ham
Directions:
1. Heat oven to 400 degrees. Spray bottom and sides of 12 muffin cup pan.
2. Beat eggas slightly in medium bown with fork. Stir in Bisquick mix, milk and oil just until moistened.
3. Add cheese and ham. Stir just until mixed
4. evenly fill the muffin cups. Sprinkle 1/4 cup shredded cheese over tops.
5. Bake for 18 minutes or until lightly golden brown. Remove from pan immediatly and serve warm.

7. Wrap and refrigerate leftovers. The can be reheated for 30 seconds in the microwave.
