Haloumi Cheese And Tomato Toastie

This is a perfect light lunch and can be quite healthy if you skip out on the mayo.
Ingredients:
whole wheat buns (or bread/bagels/pitas)
couple of slices of haloumi cheese
one fresh tomato
a dab of pesto is optional, but tasty
Directions:
1. It doesn't get any easier. Spread your mayo on the bread of your choice (go light, not too heavy)
2. Add your haloumi slices (keep relatively thick)
3. Add your fresh tomatoes (fresh is KEY)
4. Add your optional pesto
5. and finally toast or grill your sandwich until the cheese melts. If you have a sandwich toaster you are in business, but if not you can just grill over any heat source to melt the cheese.
