Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Heat oil in a skillet and saute onions until pale gold.
  3. Add garlic and cook a little longer.
  4. Stir in cider.
  5. Add salt and pepper to taste.
  6. Place fish in a greased baking dish.
  7. Add lemon juice.
  8. Arrange lemon slices over the fish.
  9. Pour onion-cider mixture over fish.
  10. Place tomatoes and parsley on top.
  11. Dot with butter.
  12. Bake for 20 minutes, or until cooked.
