Half Healthy Apple Spice Muffins

Making specific changes to an apple cake recipe makes these muffins pretty healthy without sacrificing flavor. Apple baby food replaces butter and has a smoother consistency than applesauce.
Ingredients:
1 cup all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/16 teaspoon ground cloves
1 (4 ounce) jar apple baby food
1/2 cup brown sugar
1 egg
2 egg whites
1/3 cup canola oil
1 1/2 teaspoons vanilla
1 lemon, zest of
1/2 apple, cut into wedges
1/3 cup slivered almonds (optional)
Directions:
1. Preheat oven to 350^.
2. Combine flour, baking powder, salt, and spices in a large bowl. In a separate bowl, mix together sugar, baby food, eggs, oil, and lemon zest. Combine with dry ingredients, mix well. When oven is preheated, toast almonds on cookie sheet for approximately 5 minutes, then toss with batter. Spoon into greased muffin tins, filling 1/2 to 3/4 of the way. Top each muffin with a wedge of apple (or a half wedge if you have a bigger apple). Bake for approximately 25 minutes.
