I got this recipe from my Mom many years ago. It is still one her and Dad's favorite. We love it too. Replace the chicken stock with a vegetable broth and it is pure vegetarian.
Ingredients:
2 teas. olive oil
2 c. chpped onions
2 cloves garlic minced
2 c. peeled and diced sweet potatoes
1/2 c. chopped celery
1 c. tomato diced
3/4 c. green pepper diced
1 1/2 c. chickpeas, drained
3 c. chicken stock
2 teas. paprika
1 teas each tumeric, basil, & salt
dash of cayenne and cinnamon
1 bay leaf
1 t. tamari
Directions:
1. Saute the onion, sweet potato, and garlic in the olive oil for 5 minutes
2. Add the stock
3. Add all the seasonings except the tamari
4. Simmer for 15 minutes
5. Add the celery, tomato, green pepper and chick peas
6. Simmer until the vegetable are tender.
7. Add the tamari just before serving.
