Erin found this recipe and thought it sounded good – I thought it sounded rather odd…who puts beer in their cake? Read more ? Erin won this one…I made it for Easter dinner and it was absolutely delicious. It makes a very rich, dark chocolate, dense, moist cake and there is no flavor of beer - Guinness is almost sweet, so I guess that just added to the richness of the cake flavor. The one piece I had left over was still delicious on the third day.
Ingredients:
cake
butter for springform pan
1 cup guinness stout
10 tablespoons butter
3/8 cup unsweetened dark cocoa
2 cups sugar
3/8 cup sour cream
2 large eggs
1 tablespoon vanilla extract
2 cups unbleached flour
21/2 teaspoons baking soda
frosting
11/4 cups powdered sugar
8 ounces cream cheese, at room temperature
1/2 teaspoon vanilla extract
1/4 cup heavy cream
Directions:
1. Butter a 9” springform pan and line the bottom with parchment paper.
2. In a large saucepan, combine Guinness and butter; place over medium-low heat until butter melts, then remove from heat.
3. Add cocoa and sugar; whisk to blend.
4. In a small bowl, combine sour cream, eggs and vanilla; mix well.
5. Add sour cream mixture to Guinness mixture.
6. Add flour and baking soda, and whisk again until smooth. Pour into buttered pan, and bake at 350 degrees until risen and firm, 45 to 60 minutes.
7. Place pan on a wire rack and cool completely in pan.
8. Prepare the frosting by mixing powdered sugar with the softened cream cheese and extract; blend until smooth.
9. Add heavy cream, and mix until smooth.
10. Remove cake from the pan and place on a platter or cake stand. Frost the top of cake only, so that it resembles a frothy pint of Guinness.
