Guilt Free Zucchini Bread

I love zucchini bread but hate the guilt from using all that oil and butter that most recipes call for. I created this recipe by making a few tweaks to my mother's recipe and everyone loves it! - including her :) A fun twist is to make zucchini muffins instead.
Ingredients:
2 1/2 cups grated zucchini
1/4 cup natural applesauce
1 1/2 teaspoons pure vanilla extract (imitation will work, but i prefer pure)
2 organic eggs
1 1/2 cups whole wheat flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 cup raisins (optional)
1/2 cup walnuts (optional)
Directions:
1. Preheat oven to 350.
2. Grease bread pan.
3. Combine dry ingredients (except raisins and walnuts) in medium bowl.
4. In large mixing bowl combine wet ingredients (I prefer to use my Kitchen Aid).
5. Once wet ingredients are mixed, slowly incorporate dry ingredients.
6. Fold in raisins and walnuts.
7. Add to bread pan and bake for 40-45min. or until toothpick inserted in center comes out clean.
