Guilt-free Vanilla Cupcakes

Finally! A guilt-free cupcake that doesn't taste guilt-free! These precious fluffcakes contain only a fraction of a regular cupcake's 350 calories and 17 grams of fat. In fact, you'd never guess that these contain a mere 3 grams of fat and 170 calories per cake. Read more . Enjoy! (Adapted from HG)
Ingredients:
1 tub fat-free whipped topping (like cool whip)
1.5 oz box fat-free, sugar-free instant vanilla pudding mix
1 box vanilla cake mix (18.25 oz)
1 1/2 tsp. baking powder
1 tsp. vanilla extract
1 12 oz. can diet cream soda (you could also use diet lemon-lime)
1 c. liquid egg whites (or about 8 raw egg whites)
sprinkles of your choice
Directions:
1. For Frosting:
2. Mix the whipped topping and 3 Tbs of the pudding mix until smooth. Pop it in the fridge until ready to frost your cupcakes.
3. For Cakes:
4. Mix the cake mix, baking powder and remaining pudding mix and stir until free from lumps.
5. Add the soda and vanilla extract, whisk until smooth.
6. In a separate bowl, beat egg whites with an electric mixer until fluffy (about 2 minutes)
7. Gently fold egg whites into batter.
8. Line 18 cups in 2 12 cup muffin pans.
9. Evenly distribute batter between the 18 cups.
10. Yes... you only need 18 cups! They will be VERY full.... this is okay!!!
11. Bake 15-17 minutes, or until toothpick inserted into the middle comes out fairly clean.
12. Allow to cool completely.
13. Once cooled, top evenly with frosting and 1 tsp of sprinkles.
14. Enjoy your guilt-free treat!
