This recipe is a low fat alternative to regular cookies. Replacing shortening with mostly applesauce makes this cookie soft tasty and even better GUILT FREE! For an even better cookie, use all organic ingredients! Note: 1/2 cup applesauce can replace the apples, for a quicker preparation time.
Ingredients:
1/4 cup margarine
1 cup brown sugar, packed
1 egg
1/2 cup ripe banana, mashed
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
4 cups rolled oats
1/2 cup chopped walnuts
2 small apples
Directions:
1. Peel and core apples. Slice thinly and bring to a rolling boil on the stove with 1 1/2 cups of water. Add cinnamon, reduce heat and cover, boil until apples are tender (approx 15-20 min)*. Uncover and boil off all remaining water. Mash apples. Cool before adding to liquid ingredients.
2. Blend together the margarine, brown sugar, mashed banana, vanilla and egg. Add apple sauce.
3. Mix together flour, baking soda, salt. Add oats and walnuts, then combine with wet ingredients.
4. Bake at 350 degrees for 10-12 minutes.
5. *For a quicker prep time, substitute 1/2 cup applesauce. Combine cinnamon into dry ingredients and reduce sugar if applesauce is sweetened.
