A great healthy way to eat stuffed eggs. Protein, fiber and no cholesterol. Here's something to make with those Easter eggs that you colored.
Ingredients:
6 hard-boiled eggs (cold, halved and yolks removed)
1 avocado, mashed
2 tablespoons salsa, your favorite
12 cilantro leaves
Directions:
1. Mix avocado with salsa.
2. Place a scoop into each half.
3. Top with a cilantro or parsley and serve.
