A salad for lunch - that's it.
Ingredients:
2 or 3 ripe avocados
1 cup peeled, diced tomatoes
2 hardcooked eggs, diced
1/2 cup sliced, stuffed olives
1/4cup minced green onions
1/4 cup olive oil
2 t. cider vinegar
1 t. salt (or less)
1/4t. dried ground chili peppers
shredded lettuce
4 slices crisp bacon, crumbled
Directions:
1. Peel and dice the avocados
2. mix with the diced tomatoes, eggs, olives, onions, oil, vinegar, salt and chili peppers.
3. Heap on lettuce (leaves or shredded) and sprinkle crisp bacon on top.
4. Enjoy!
