I love guacamole, but I hate the way most people make it, with crunchy chunks of fresh onion, tomato, cilantro, and sometimes even bits of garlic. So I make it at home, to get a similar flavor, without the crunch.
Ingredients:
1 avocado
onion powder (generously applied)
salt, pepper, and tony chachere's original creole seasoning to taste
a tiny bit of garlic powder
1 1/2 tablespoons mild pace picante sauce (chunky style)
restaurant style tortilla chips
Directions:
1. Cut an avocado in half. With a spoon, scoop the avocado into a bowl, discarding the avocado seed. Smush the avocado up with a fork.
2. Sprinkle on onion powder, salt, pepper, Tony Chachere's original creole seasoning, and garlic powder to taste. (You're going to want to be pretty generous with the onion powder, but only use a tiny bit of garlic powder.) Mix well.
3. Once it tastes to your liking, then add 1 1/2 tablespoons of mild pace picante.
4. Serve with tortilla chips.
5. ***Note: If you are not going to eat it right away, squeeze one half of a lemon, to get about half of the juice out of it. Be careful not to get any seeds into the guacamole. Mix lemon juice into the guacamole, cover the bowl, and place in fridge. The lemon juice helps it keep its pretty green color, but also adds a bit of tartness to it.***
