This makes 1 quart of dip.... Serve as an appetizer, or a party with friends!
Ingredients:
4 ripe avocados medium size
2 oz onion grated
1 small, hot green chile such as jalapeño minced
1 oz lime or lemon juice
1 oz olive oil
to taste --- salt
12 oz fresh tomatoes (optional)
Directions:
1. Pit and peel the avocados.
2. Mash the pulp coarsely.
3. The purée should be slightly lumpy rather than smooth.
4. Mix in the onion, minced chile, lime or lemon juice, olive oil, and salt to taste.
5. If desired, peel, seed, and dice the tomato and mix it into the avocado.
6. Cover tightly with plastic wrap placed on the surface of the guacamole.
7. This is to protect it from air, which will darken it.
8. For the same reason, guacamole should not be made too long before serving time.
9. Chill the guacamole until ready to serve.
10. Notes:
11. If fresh chiles are not available, use canned chiles or a few dashes of hot red pepper sauce.
12. Variations:
13. Sour Cream Avocado Dip
14. Use 1 oz onion.
15. Omit the olive oil and tomato.
16. Mash the avocado to a smooth purée. Add 1/2-3/4 pint sour cream.
