Classic Appetizer. Lighter version. Great for all occasions!
Ingredients:
1 avocado (ripe)
2 scallions, thinly sliced (white and light green portion only)
1 small jalapeno pepper, seeded and minced
2 plum tomatoes, chopped
1 tablespoon fresh lime juice
1/2 teaspoon salt
Directions:
1. Cut the avocado in half and discard the pit.
2. Scrape the avocado pulp onto a small bowl; coarsely mash with a fork.
3. Add the tomatoes, scallions, jalapeno pepper, lime juice, and salt; mix until just combined.
4. Scrape into a serving dish and serve at once.
