Hey there all of you who steer clear of red meat as I do :) Here's a grown-up burger for your grown up tastes. I came up this today, as I was wondering what to put on my burger as I didn't have any mushrooms. This is so good, I went to Wal-mart to stock up on peppers to roast for this sandwich. Hope you enjoy it as much as I did, and try it with my unfried sweet potato fries and tell me what you think about these recipes :)
Ingredients:
1 hamburger style boca burger veggie burger (defrosted)
nostick cooking spray
1 slice fat-free swiss cheese (i use kroger brand or kraft free)
1/2 orange bell pepper, seeded, roasted, cooled then peeled, sliced into strips
1/2 roma tomato, seeded and cut into thin strips
2 -3 leaves iceberg lettuce, cut into thin strips
1 hamburger bun, split, lightly toasted
1 tablespoon fat-free mayonnaise (i use kraft fat free)
dijon mustard (i use the wal-mart brand)
Directions:
1. Pan sauté the burger in small skillet sprayed with no-stick cooking spray until browned on both sides.
2. Build your burger by spreading the mayonnaise on top half of bun, Dijon mustard on bottom half.
3. Place the Boca burger on the top bun, followed by the swiss slice, then lettuce, then the tomato slices and last the roasted bell pepper slices.
4. Wow that's a big burger!
5. Enjoy a taste explosion with no meat!
6. *To roast a pepper, slice in half and remove seeds.
7. Press down on pepper halves with the palm of your hand to flatten.
8. Place on a pan lined cookie sheet and broil at 5-°F until the peppers' skin begin to blacken and bubble.
9. Remove from oven, toss in a zip top baggie, close.
10. Set aside for about 15 minutes or until you can handle the peppers.
11. Peel and use in recipes.
