This easy jello is a must-have at our family holiday dinners. Unless you are allergic to wine, or your religion forbids it, DO NOT omit the port! It is what gives this jello its unique flavor. I have seen many similar cranberry jello recipes, but none compares! Read more !
Ingredients:
jello
three 3 ounce packages cranberry flavored jello (see note)
1-1/2 cups boiling water (not just hot)
one 16 ounce can whole berry cranberry sauce
one 20 ounce can crushed pineapple (do not drain)
1 cup port wine
topping
one 8 ounce package cream cheese, softened
one 8 ounce container sour cream, at room temperature
a few drops of milk, if needed
Directions:
1. In a large bowl, mix together jello and boiling water until jello completely dissolves. Stir in cranberry sauce, pineapple and its juice, and port wine and mix to blend well. Pour into a 13X9 clear glass serving dish or serving dish of equal volume. Refrigerate until set, about 4-6 hours.
2. In a small mixing bowl, beat together cream cheese and sour cream, adding a few drops of milk, if necessary, until mixture is smooth and of spreading consistency. Spread evenly over top of set jello. Refrigerate until ready to serve.
3. Note: Cranberry flavored jello is usually only available during the Thanksgiving and Christmas holidays. If you cannot find it in your area, raspberry flavored jello works equally well. If you use a different size/shape serving dish (like a cut crystal bowl for a prettier presentation), you may need to adjust the topping amounts. You do not need to buy top of the line port for this recipe. I buy whatever is the cheapest on sale at the grocery store and it always works well.
