Ingredients:

Directions:

  1. Cook onions, garlic, tomato and spices in oil on med-high, then place all in crockpot or in any big pot on stove. Can play with ingredient combo - using all the spices is best.
  2. Let simmer for an hour. Serve with rice.
  3. Optional garnishes (use as many as possible):
  4. - hard-boiled eggs, peeled (one for everyone - can be added to stew a few minutes before serving)
  5. -sliced boiled yam or sweet potato
  6. -breadcrumbs or croutons
  7. -sliced fruit (banana, mango, orange, papaya, pineapple, etc)
  8. -shredded lettuce
  9. -chopped nuts
  10. -shredded coconut
  11. -sliced tomato
  12. -sliced onion (raw and fried)
  13. -chile peppers
  14. -chutney
  15. -African hot sauce
  16. -salt, black pepper, red pepper
