Ground Turkey and Macaroni Medley

Good with tossed green salad and hot bread.
Ingredients:
1 lb. extra lean ground turkey
1 small onion, minced
28 ounces tomatoes, with liquid
4 ounces dry whole wheat pasta
10 oz. frozen mixed vegetables
1/2 tsp. salt
1/2 tsp. dried oregano leaves
1/2 tsp. dried basil leaves
1/4 tsp. pepper
2 oz. low-fat parmesan cheese, grated
Directions:
1. Crumble turkey into large skillet. Over high heat stir until meat is not pink.
2. Add onion, turn heat low.
3. Add tomatoes with liquid and macaroni. Stir to blend. Heat to simmering.
4. Add mixed vegetables. Cover and cook until vegetables are done and macaroni is tender, about 20 minutes.
5. Sprinkle with salt, oregano, basil and pepper.
6. Serve with Parmesan cheese to spoon over individual servings.
7. Garnish with black olives and pickles if you like.
