Ground Beef Mexican Style

This spicy ground beef casserole is sort of an enchilada in a bowl without the tortillas.
Ingredients:
1 lb ground beef
1 cup salsa
1/2 cup water
1 green pepper, chopped
1 bunch green onion, chopped
1 (8 ounce) package wide egg noodles
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1 tomato, chopped
Directions:
1. In a large non stick skillet cook and stir ground beef until browned.
2. Drain off excess fat.
3. Stir in salsa and water.
4. Simmer for 10 minutes.
5. Meanwhile cook pasta until al dente, drain.
6. Stir in green pepper and onions and continue simmering until veggies are crisp tender.
7. Stir in noodles and sour cream.
8. Sprnkle grated cheese on top and cover pan until cheese melts.
9. Sprinkle tomatoes on top and serve.
