Ground Beef and Veggies

Just a mix of whatever I had around. Serving size here is 1 cup. Most peploe have 2 cups for a total of 338 calories. Still not bad for a hearty dinner meal.
Ingredients:
1 pound organic ground beef
2 tbsp olive oil
1/4 cup green onion, chopped
2 tbsp chopped garlic
4 cups sweet potatoes, small cubes
15 ounces lima beans
15 ounces corn kernels
4 cups spinach
Directions:
1. Heat oil in a large skillet
2. Add garlic and chopped green onion, sautee until tender. Add sweet potatoes and stir for 5 minutes.
3. Add ground beef, and cook until brown.
4. Add veggies, and cook until all is heated through, and potatoes are tender. Add spinach at last minute until wilted. Stir all to mix well.
