Grilled Watermelon With Honey Lime Syrup |

How luscious, juicy and sweet this is. Easy to make and cool and refreshing . Use as an appetizer or dessert. Adapted from Plats du Jour from Chef Pallarino of Stella Blu - West Consohocken, Pa Ingredients:
honey 1/4 c |
lime juice 1/2 c |
1 seedless baby watermelon, peeled, cut into large chunks |
fresh fruit of choice, sliced or chopped for garnish as needed - for me pineapple wedges are best. |
Directions:
1. Cook honey and lime juice in a small, nonreactive saucepan over low heat, stirring occasionally, until reduced by 1/2 and the consistency of a syrup. Reserve to cool. 2. Skewer and grill chunks of watermelon on medium for about 3 minutes on each side. Serve drizzled with honey-lime syrup. Garnish with fresh fruit. Grilled pineapple wedges. |
