Fresh veggies mixed together and grilled to perfection
Ingredients:
5 medium yukon gold potatoes- diced
1 medium green pepper - chopped
2 cloves fresh garlic - chopped
2 shallots - chopped
2 cups fresh broccoli florets
4 cups fresh spinach
1/2 cup olive oil
1tb tastefully simple southwest seasoning salt
sea salt and pepper to taste
Directions:
1. In a large mixing bowl add all ingredients and mix to get all veggies coated with olive oil add extra if needed.
2. Pour into a disposable aluminum pan or other grill safe dish. cover with foil.
3. grill at 400 for 30 mins.
