I had this dish a few summers ago, I remembered it was so good that it needs to be shared with this little group here on Recipezaar! Give it a try and you will including this as a regular meal.
Ingredients:
3 tablespoons olive oil
3 tablespoons lemon juice
3 tablespoons chopped fresh oregano
3 tablespoons chopped scallions
3/4 teaspoon salt
1/2 teaspoon ground pepper
1 1/2 lbs shrimp, shelled and deveined
1/3 cup extra virgin olive oil
2 small shallots, chopped
2 garlic cloves, minced
3 pepperoncini peppers
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
2 tablespoons minced parsley
3 teaspoons balsamic vinegar
Directions:
1. In a glass bowl mix the olive oil, lemon juice, oregano, shallots, salt, pepper and shrimp. Mix very well so the shrimp is coated very well, refrigerate at least 30 minutes, the longer the better.
2. For the sauce! In a medium sauce pan add olive oil, shallots and garlic, saute' on medium for 2 minutes. Slice the Peperoncini pepper in thin strips and add to the sauce pan. You can use any type of your favorite pepper, a mild one that's sweet works the best. Now add the salt and pepper and stir for 30 seconds. Skewer the shrimp and place on grill until your desired doneness, about 2 minutes on each side.
3. Just before serving Heat sauce and add the parsley and balsamic vinegar and stir for 1 minute. Serve over the shrimp.
