Grilled Salmon With Tomatoes Spinach And Capers

Nice grilled(broiled) salmon dish with tomato,spinach and capers topping
Ingredients:
4 salmon fillets(6oz ea.),skin on
1tbs extra virgin olive oil
1 med. onion,chopped
2 cloves garlic,minced
1lb. plum tomatoes,chopped
3c baby spinach
1tbs rinsed and drained capers
4 lemon wedges
Directions:
1. Heat oven to broil. Lightly coat baking dish with cooking spray
2. Place salmon,flesh side up,in baking dish and lightly season with salt and pepper. Broil without turning until salmon is cooked through 8 to 10 mins.
3. Meanwhile,heat oil in large saucepan over med heat. Add onion and garlic and cook,stirring occassionally,until softened,about 7 mins. Stir in the tomatoes,spinach and capers. Cook 2 mins. longer. Remove pan from heat.
4. Remove salmon from broiler and transfer to 4 serving plates. Spoon tomato mixture over salmon,squeeze lemon wedges over top and serve warm.
